Getting the food processor out is very tedious to me. There are too many pieces. It’s obnoxiously loud. And washing it is also a nightmare. Every kitchen gadget with a battery or electric cord is too much for me, except my immersion blender, nobody does it like her! But this isn’t about my immersion blender, this is about my elbow-grease powered zippy chopper.
Meet what I like to call my zippy food processor. She is small and mighty. Practical and thorough. I love her. Oh and very very easy to clean. It all started when I realized I am entering my almost mid-30s soon and I need to eat more fiber because I am eating a lot of protein rich foods. I work during most of the day (albeit from home) so I don’t have too much time to chopchopchop nutrient dense salads. I’d be dammed if I had to pull out a food processor daily and I don’t have the time or patience at the moment to mignonette food for lunch or dinner. I also find meal prepping to be boring and if I have to eat the same thing more than two days in a row I will just end up eating boxed mac and cheese with boiled broccoli in it. Add on top of all that, my beautiful gorgeous little toddler baby boy can’t eat big pieces of food because he hasn’t developed that skill yet, and in this house we all eat mostly the same foods, because I am the one cooking.
So I started zipping together a bunch of veggies and adding a dressing to it. Et voilá! 5 different types of vegetables and a happy gut and a toddler who cannot really detect food. Here is a list of ways I have been sneaking in veggies into my meals and a bonus of toddler foods because I am a mom and here we are. This is about 1 week of zippy content. Enriched cucumber salad: red cabbage, peppers, tender garlic, and kale w/ chilli oil and lime

Okay my kid’s white rice with teeny tiny veggies might look borderline foul BUT what you need to focus on is all the almost undetectable vegetables that he will consume: bell peppers! mushroom! onion! tender garlic! All thanks to my zippy choppy gadget!
